Ingredients
- 1 tablespoon olive oil
- 1/4 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked nopales, diced or sliced
- 4 large eggs beaten
- Salt, to taste
- freshly ground black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add onions and garlic. Cook for 3 minutes, until onions have softened and are translucent.
- Add nopales and cook for 3 more minutes.
- Add eggs and cook, stirring every 10 seconds, until light, fluffy, and scrambled to your liking.
- Season with salt and pepper to taste, and serve immediately
