Ingredients
- 1 cup warm water
- ⅓ cup sugar
- ⅓ cup fish sauce
- ¼ cup lime
- 3 garlic cloves, minced or mashed
- 2 bird's eye (Thai chilies), thinly sliced
Instructions
- In a small bowl, mix 1 cup warm water with ⅓ cup sugar. Stir until the sugar is completely dissolved.
- Pour in ⅓ cup fish sauce and ¼ cup lime (or rice vinegar). Mix well.
- Add 3 garlic cloves, minced or mashed and 2 bird's eye (Thai chilies), thinly sliced(or adjust to taste). Stir them into the sauce.
- Taste and adjust the flavors as needed, then let the sauce rest in the refrigerator for at least 30 minutes to enhance its depth and balance before serving.

Notes
- Use high-quality fish sauce – It makes a BIG difference. Three Crabs is my go-to for this dipping sauce!
- Adjust the sweetness – If you like it sweeter, add more sugar.
- Make it ahead – It tastes even better after a few hours in the fridge.
