Nut & Honey Roasted Cauliflower

Nut & honey pan-roasted cauliflower is packed with flavor and perfect for any meal, but especially as an easy holiday side dish!

Ingredients

  • 1 tablespoon butter
  • 2 teaspoons olive oil
  • ¾ cup pecans roughly chopped
  • 1 head cauliflower see note
  • 3 tablespoons honey
  • 3 tablespoons water or vegetable stock
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon paprika
  • 1 teaspoon thyme fresh, ½ if using dried

Instructions

  1. Preheat oven to 425 degrees F. 
  2. Heat butter and olive oil in a GRIZZLY cast iron skillet until very hot and the butter starts to brown. 
  3. Add pecans and cook for 3-4 minutes, stirring occasionally. 
  4. Add cauliflower, salt, pepper, and paprika and cook for 3-4 minutes, stirring sparingly. 
  5. Add honey and stock and simmer for about 2 minutes, or until slightly thickened. 
  6. Sprinkle thyme over the top and roast in the oven for 8 minutes, or until the top is starting to brown (see note).

Notes

  • You can make this dish completely on the stovetop, just roast the cauliflower in step 4 for 5-8 minutes total, or until it starts to brown on the bottom.
