Ingredients

  • 1¾ cup flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup white sugar
  • ½ cup unsalted butter, softened to room temperature
  • ¼ cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 10-12 tbsp Nutella, room temperature, as needed

Instructions

    Cup of Yum
  1. Preheat the oven to 400 degrees. Coat a muffin pan with cooking spray.
  2. In a small bowl, stir together the flour, baking powder, and salt together until well combined.
  3. In a separate large bowl, beat the sugar, butter, oil, eggs, and vanilla with a hand mixer until creamy and smooth.
  4. Add the flour mixture to the batter until just combined.
  5. Spoon the batter evenly into the muffin pan. Side Note: This recipe only made 10 regular-sized muffins for me.
  6. Spoon 1 tablespoon of Nutella on top of each cup of muffin batter then swirl with a wooden skewer or chopstick.
  7. Place into the oven and bake for 5 minutes. Reduce the heat to 350 degrees and continue to cook for 13-15 minutes, or until a tester inserted in the center comes out clean. Remove from the oven and cool in the pan for a few minutes before putting them on a wire rack to finish cooling. Side Note: Starting the baking at a higher temperature then reducing it helps make the muffin dome.
