Ingredients
- 3 cups water
- 1/4 teaspoon kosher salt
- 1 1/2 cups quick cooking oats I used Bob's Red Mill - Gluten Free
- 1 vanilla bean pod
- 4 tablespoons brown sugar
- 1 pint fresh raspberries
Instructions
- In a small saucepan bring water and salt to a boil. Spit vanilla bean and scrape the seeds into the water with the oats. Add the whole pod for more flavor (optional). Add the oats, reduce heat, and cook for 3-5 minutes.
- Cover and and remove from heat and let sit until it reaches the consistency you prefer. Remove vanilla pod.
- Divide the oatmeal among four broiler-proof bowls. Top with 3-4 raspberries, sprinkle 1 tablespoon of sugar over each, and place under broiler. Broil until sugar caramelizes and forms a crust, about 3 to 4 minutes. Watch carefully so sugar doesn't burn. Serve immediately with cream and additional fruit or topping of your choice if desired.
