Oatmeal, Chocolate Chip, Craisin, and Pecan Cookies

Ingredients

  • ½ cup of unsalted butter softened
  • ¼ cup white sugar
  • ½ cup of brown sugar
  • 1 egg
  • 1 tsp vanilla
  • ½ cup plus 2 Tbsp flour
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1 ½ cups of quick-cooking oats
  • 1 cup semi-sweet chocolate chips
  • ½ cup of craisins
  • ¼ cup pecans chopped

Instructions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Using a hand mixer or stand mixer, beat the butter, white sugar, and brown sugar until creamy.
  3. Mixing slowly, add the egg and the vanilla.
  4. In a separate bowl combine the flour, salt, and baking soda; slowly stir the flour mixture into the creamed mixture until blended.
  5. Add the oats, chocolate chips, craisins, and pecans then mix thoroughly.
  6. Drop spoonfuls onto the baking sheet.
  7. Place the baking sheet into the oven and bake for 10-13 minutes. Let the cookies cool on a wire rack. Enjoy.
