Oatmeal Chocolate Chip Muffins

These Oatmeal-Chocolate Chip Muffins are a delicious way to start the day!

Ingredients

  • 1 cup all-purpose, white whole-wheat or GF 1:1 flour (150g)
  • 1 cup old-fashioned rolled oats (GF, if needed)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk of choice (I used almond milk)
  • 1/3 cup avocado oil (or any neutral-flavored cooking oil)
  • 1/4 cup white sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2/3 cup semi-sweet chocolate chips

  1. Preheat your oven to 350 degrees Fahrenheit and spray a muffin pan with cooking spray.
  2. In a medium bowl, whisk the flour, oats, baking soda, and salt.
  3. In a separate bowl, whisk all remaining ingredients except the chocolate chips.
  4. Whisk the dry ingredients into the wet ingredients until just mixed. Do not overmix.
  5. Fold in the chocolate chips.
  6. Fill your muffin cavities 2/3 of the way full (don't overfill!) and bake for 15-20 minutes, or until a toothpick inserted in the pan comes out clean.
  7. Let cool in the pan completely.
  8. DEVOUR!
