Ingredients

  • ½ cup brown sugar lightly packed
  • 4 tablespoons granulated sugar
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 cup all-purpose flour
  • 1 ¼ cups old-fashioned oats
  • ¾ cup milk chocolate chips
  • ½ cup miniature M&M's
  • vanilla ice cream

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  2. In a medium-sized bowl, beat together the ½ cup brown sugar, 4 tablespoons granulated sugar, ½ cup vegetable oil, 1 large egg, and 1 teaspoon vanilla extract.
  3. In a separate bowl, combine the ½ teaspoon baking soda, ½ teaspoon baking powder, 1 teaspoon cornstarch, ½ teaspoon salt, ¼ teaspoon cinnamon, and 1 cup all-purpose flour.
  4. Slowly add 1 ¼ cups old-fashioned oatshe flour mixture to the butter mixture and beat until combined.
  5. Stir in the 1 ¼ cups old-fashioned oats, ¾ cup milk chocolate chips, and ½ cup miniature M&M's.
  6. Scoop the cookie dough into 1 ½-inch balls and place on the prepared pan.
  7. Bake for 9-11 minutes or until golden brown. Remove and transfer to a wire cooling rack.
  8. Allow the cookies to completely cool. Sandwich two cookies with a large scoop of vanilla ice cream inside and enjoy!
