Oatmeal cookies with banana and almond butter

Healthy oatmeal cookies with just banana and almond butter. And some vanilla and cinnamon for extra flavour. Full of fiber, vitamins and minerals. These cookies are both glutenfree and vegan.

Ingredients

  • 1 cup rolled oats gluten free
  • or or cup Gluten-free oatmeal cut or quick oats
  • 1 banana
  • 2 tablespoons almond butter
  • 2 pinches sea salt or to taste, Celtic variety
  • ½ teaspoons pumpkin spice or cinnamon
  • ½ tl vanilla powder or extract, Bourbon variety

Instructions

  1. Preheat the oven to 390 F. Prepare a baking sheet with baking paper.
  2. If you use old-fashioned oats: grind them shortly into 'cut' oats.
  3. Mash the banana and mix all the ingredients through it.
  4. Make 6 balls (with a spoon or by hand). The dough is slightly sticky, but just right to handle. If it is too sticky, you can add some oatmeal. Bananas can vary in size.
  5. Place the balls on your baking sheet and press them into the desired shape. They will not spread anymore.
  6. Set the timer for 20 minutes, but keep an eye on them from about 16 minutes. Every oven is a little different. In my oven, they become crispy on the edges after 20 minutes.
