Ingredients

  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup cooked Quaker Instant oatmeal - Cinnamon and Spice Flavor
  • 1/2 cup pumpkin
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup brown sugar
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat oven to 350 degrees F.
  2. Prepare one package of Quaker Instant Oatmeal - Cinnamon and Spice Flavor - per package directions.
  3. In medium bowl, add 2 eggs, vanilla, cooked oatmeal, and pumpkin.
  4. In a large bowl add 1 cup flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 cup brown sugar, 1 tablespoon pumpkin pie spice.
  5. Using an ice cream scoop or large spoon, spoon the batter into muffin pins.
  6. Bake 18 to 20 minutes in a preheated oven.
