Oatmeal-Raisin Cookies

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups rolled oats old-fashioned
  • 1/2 cup butter softened, unsalted
  • 1/2 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 egg large
  • 1 teaspoon vanilla extract pure
  • 1 cup raisins

Instructions

  1. Preheat oven to 350°F. Line two or three baking sheets (enough for 24 cookies) with parchment paper.
  2. Whisk together flour, baking soda, cinnamon, and salt. Stir in oats.
  3. In a separate bowl, use an electric hand mixer to cream together butter, brown sugar, and granulated sugar until smooth. Add in egg and vanilla and beat until smooth.
  4. Gradually add dry ingredients to wet ingredients, and use a spatula to gently mix until just combined. Stir in raisins.
  5. Drop tablespoonfuls of dough onto prepared baking sheets, spacing them about 2 inches apart so they don't stick together.
  6. Bake for 10 to 12 minutes, or until the edges are golden. Cool on the baking sheet for 5 minutes, then transfer to wire rack to cool completely.
