Ingredients

  • 1 cup old-fashioned oats
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2/3 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup raisins

  1. Preheat oven to 400°F and prepare a muffin tin with liners or a light coating of nonstick spray.
  2. In a bowl, soak oats in milk for 10 minutes. In another bowl, whisk together eggs, oil, and brown sugar until smooth.
  3. Combine all-purpose flour, whole-wheat flour, baking powder, baking soda, salt, and cinnamon in a separate mixing bowl.
  4. Add the wet ingredients to the dry ingredients, mixing just until combined. Fold in the soaked oats and raisins.
  5. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
