Oatmeal Raisin Muffins Recipe

These gluten-free, dairy-free, and flourless oatmeal raisin muffins are just as wholesome as they are delicious! Enjoy them with a protein source for breakfast or as an afternoon snack!

Ingredients

  • 2 cups rolled oats
  • 2 large eggs
  • 1 cup unsweetened applesauce or cottage cheese*
  • 3 Tbsp avocado oil or coconut oil
  • 1/3 cup pure maple syrup
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 3/4 tsp sea salt
  • 2/3 cup raisins

Instructions

  1. Preheat the oven to 350 degrees F and line a muffin tray with muffin papers (or spray with cooking oil).
  2. Add all of the ingredients except for the raisins to a blender and blend until completely smooth. Stir in the raisins.
  3. Pour muffins batter into the muffin holes, filling them ⅔ of the way up.
  4. Bake on the center rack of the preheated oven 12 to 15 minutes, or until set up.
  5. Allow muffins to cool at least 30 minutes before unwrapping and eating.

Notes

  • *If using cottage cheese instead of applesauce, consider adding an extra 1-3 tablespoons of brown sugar to offset the loss of sweetness.
