Oatmeal Walnut Cookies

These oatmeal walnut cookies are crunchy and tasty, with a hint of cinnamon that makes them irresistible!

Ingredients

  • 1 tick unsalted butter room temperature
  • 2/3 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg room temperature
  • 1 2/3 cup old fashioned oatmeal
  • 1/2 cup all purpose flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 2/3 cup chopped walnut

Instructions

  1. Cream the butter and sugar in a bowl using an electric mixer.
  2. Add the egg and mix well.
  3. Add the old fashioned oatmeal, flour, cinnamon and baking powder. Mix well using a wooden spoon.
  4. Add the chopped walnut and mix again.
  5. Let the dough chill in the fridge for 2 hours.
  6. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  7. Using a spoon or ice cream scoop, form balls of cookie dough and place them 2 inch apart on the baking sheet.
  8. Bake for 13-15 minutes until the bottoms of the cookies start to brown.

Notes

  • Make sure to refrigerate the cookie dough for at least 2 hours up to 3 days. 
  • Store the cookies in an airtight container and keep in a cool and dry place up to 3 days. 
  • To freeze the baked cookies, place them in a freezer bag and freeze for up to 3 months. Thaw at room temperature or in the oven at 220 degrees F for 10 to 20 minutes. 
  • To freeze the cookie dough, transfer it to a freezer bag and freeze for up to 3 months. To bake the cookies, thaw the dough in the fridge overnight, then proceed with the baking instructions.
