Oatmeal Whole Wheat Peanut Butter Bars with Chocolate Chips

Ingredients

Cookie Base:
  • 4 tbsp butter softened, unsalted
  • ¼ cup sugar
  • ¼ cup brown sugar packed
  • 1 egg slightly beaten, small
  • 2½ tbsp peanut butter smooth
  • ½ tsp vanilla extract
  • ½ cup quick oats
  • ½ cup whole wheat flour
  • ¼ tsp baking soda
  • ⅛ tsp salt
  • 6 oz chocolate chips semisweet mini
Glaze:
  • ¼ cup powdered sugar sifted
  • 2 tbsp peanut butter smooth
  • 1-2 tbsp milk depending on how thick you want the glaze

Instructions

  1. Preheat the oven to 350 degrees. Coat an 8 x 8-inch baking dish with cooking spray.
  2. Cream the butter, sugar, and brown sugar with a hand mixer until creamy and smooth.
  3. Add the egg, peanut butter, and vanilla and beat until creamy and well combined.
  4. Combine the oatmeal, whole wheat flour, baking soda, and salt in a bowl.
  5. Add the oatmeal mixture to the butter mixture and mix well.
  6. Spoon the mixture into the prepared baking dish. The filling will be sticky so wet your hands to pat the dough down into the pan.
  7. Place into the oven to bake for 15-17 minutes or until golden brown.
  8. While the cookie base is baking combine the peanut butter, powdered sugar, and milk until well combined.
  9. Place the mixture into a small zip-lock bag and seal.
  10. Remove the cookie base from the oven and pour the chocolate chips on top while it's still hot so that the chocolate chips will melt and ooze all over the cookie base.
  11. Cut a small piece out of the corner of the bag filled with the glaze then drizzle the peanut butter glaze on top of the chocolate chips.
  12. Allow it to cool before cutting into bars and serving. Enjoy.
