Ingredients
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups cherry chips or 1 cup freshly chopped cherries
- 3/4 cup white chocolate chunks or chips
- 2/3 cup shortening
- 2/3 cup butter
Instructions
- Preheat oven to 375 degrees F, and line 3 baking sheets with parchment paper. You can also use just one baking tray at a time and refrigerate or freeze the rest of the cookie dough.
- In a large bowl, combine and cream together the butter, shortening, brown sugar, and granulated sugar.
- Add the vanilla extract and eggs and mix to combine.
- Whisk together the flour, salt, and baking soda in a bowl, then add to the butter mixture and stir together until the cookie dough is formed.
- Add the cherry chips or freshly chopped cherries, and white chocolate, and combine them with the mixture.
- Drop the cookies using a rounded tablespoon onto the cookie sheet separating them apart about 3inches.
- Place the baking tray into the oven and bake for 8-10 minutes or until the edges of the cherry cookies are golden brown.
- Remove the cookies from the oven and allow them to cool on the baking tray for 5 minutes then transfer them onto a wire rack and completely cool.
- Keep these cherry cookies stored in an air-tight container, they will keep for up to 2 weeks.
