Ingredients

  • 1 medium potato peeled and boiled
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups creamy peanut butter
  • ½ cup unsweetened shredded coconut for rolling

  1. Boil the potato until tender, about 15 minutes. Once cooked, drain and mash the potato until smooth. Allow it to cool to room temperature.
  2. In a large mixing bowl, combine the mashed potato, powdered sugar, and vanilla extract. Stir until smooth and thick, creating a dough-like consistency.
  3. Roll the mixture into small balls or flatten it out and cut it into squares, depending on your preference.
  4. Spread the peanut butter in the center of each piece (like a filling), then fold the edges around the peanut butter to seal it in.
  5. Roll each piece in the shredded coconut until fully coated.
  6. Place the candy pieces on a parchment-lined tray and refrigerate for at least 1 hour to set.
  7. Once chilled, serve the candy or store it in an airtight container for up to 2 weeks.

Notes

  • You can use crunchy peanut butter if you prefer a bit of texture in the candy.
  • These candies can also be made with chocolate coating instead of coconut if preferred.
