Olive Garden Chicken Gnocchi Soup
Olive Garden Chicken Gnocchi Soup is an easy copycat recipe with chicken, fresh spinach and pillowy gnocchi in a creamy broth in 30 minutes.
Ingredients
- 2 cups chicken breast , cooked and diced
- 1 talk celery , diced
- 1/2 onion , diced
- 2 garlic minced, cloves
- 1/2 cup carrot shredded
- 1 tablespoon olive oil
- 4 cups chicken broth low sodium
- salt to taste
- black pepper to taste
- 1 teaspoon thyme
- 16 ounces potato gnocchi
- 2 cups half and half
- 1 cup spinach roughly chopped, fresh
Instructions
- Heat oil in a large pot over medium heat.
- Add celery, onions, garlic, and carrots and saute for 2-3 minutes, until onions are translucent.
- Add cooked chicken, chicken broth, salt, pepper, and thyme and bring to a boil.
- Gently stir in gnocchi and boil for 3-4 minutes.
- Reduce heat to a simmer and cook for 10 minutes.
- Stir in half and half and spinach and cook 1-2 minutes, until spinach is tender. Serve hot.
