Olivier Potato Salad (Салат Оливье)

This olivier potato salad, aka Оливье, doesn't skimp on texture or creaminess. If you like American potato salad, you'll love this classic from my childhood.

Ingredients

  • 5 medium pickled cucumbers
  • 2 large yellow potatoes
  • 3 large carrots
  • 5 eggs
  • 1/2 medium onion
  • 1 lb bologna or ham
  • 12 oz canned sweet peas rinse and drain
  • 1/2 cup mayonnaise
  • 1 tbsp salt adjust to taste
  • 1 tsp pepper adjust to taste
  • 1 tbsp Dill optional

  1. Bring a large pot of water to boil. Cook the carrots and potatoes in it for 20-30 minutes, or until they are easily pierced with a fork. Boil the eggs for 11 minutes. Set the veggies and eggs aside to cool at room temperature.
  2. Dice the veggies, bologna/ham, and eggs into small cubes.
  3. In a large bowl, mix all the ingredients together with a spoon.
  4. Toss in the mayonnaise until all the salad ingredients are evenly coated. Season to taste with salt and pepper. Optional: Sprinkle in some fresh dill.
