Omek Houria

Omek houria is a Tunisian spiced carrot salad, which is garnished with hard-boiled eggs, olives and canned tuna.

Ingredients

  • 2 lb carrots , peeled and cut into slices
  • 1 teaspoon harissa (or more, to taste)
  • 2 cloves garlic , pressed
  • 8 oz. canned tuna in olive oil , drained
  • ½ teaspoon tabel karouia (or caraway)
  • 2 hard-boiled eggs , cut into 4
  • A few black olives
  • ¼ cup extra-virgin olive oil
  • fresh parsley , finely chopped
  • salt

Instructions

  1. Boil the carrots in a large volume of salted water for about 30 minutes, covered, or until very tender.
  2. Drain them well, add the garlic, parsley, half the oil and the harissa on top. Then crush the whole thing roughly using a fork.
  3. Season with tabel or caraway.
  4. Transfer the mixture to a deep serving dish and garnish with tuna, hard-boiled egg, and black olives.
  5. Pour the rest of the olive oil over everything.
  6. Serve cold or warm, with hot bread.
