Omurice

Omurice or omu-rice (オムライス) is a classic Japanese recipe called yōshoku (Western dish): fried rice with ketchup, chicken, wrapped in a thin layer of omelette.

Ingredients

For the filling
  • 1 chicken breast cut into small cubes
  • 1 onion chopped, small
  • 2 tablespoons butter
  • 1 teaspoon vegetable oil
  • 1⅔ cup long grain rice cooked
  • ¼ teaspoon salt
  • black pepper
  • 3 tablespoons ketchup
  • 2 tablespoons peas or frozen peas, fresh
For the omelette
  • 2 egg large
  • salt
  • 2 teaspoons vegetable oil
  • Garnish
  • ketchup

Instructions

Filling

  1. In a skillet, melt the butter over medium heat and add the oil.
  2. Add the chicken and fry for 2 minutes, stirring regularly.
  3. Add the onion and cook until the onion becomes translucent.
  4. Add the cooked rice and cook on medium/high heat, stirring for 2 minutes.
  5. Season with salt and pepper.
  6. Add the ketchup and mix.
  7. Fry on medium/high heat for 2 minutes, stirring regularly.
  8. Then add the peas and cook for 2 minutes.
  9. Spread half of the ketchup rice in two tightly packed rice bowls and unmold them each in the center of a plate.
Omelette
  1. Beat the eggs and add a pinch of salt. Mix well.
  2. Add half of the oil into a pan and heat.
  3. Add half of the egg mixture into the hot pan and spread it into a thin round omelette just like a crepe.
  4. Add the rice into the thin omelette and give it an oval shape.
  5. Renew the process for the second omurice.
  6. Drizzle ketchup on top.
  7. Serve immediately.
