One-Bowl Vegan Cornbread

This easy, homemade vegan cornbread is dense and moist, just the right amount of sweet, and packed full of fresh corn flavor. It’s a wonderful treat on its own or the perfect match for a hearty bowl of vegan chili.

Ingredients

  • 1 ½ cup cornmeal
  • 1 cup all-purpose flour
  • 1 cup almond milk or other plant-based milk
  • ½ cup sugar
  • 4 tbsp vegan butter melted
  • 1 tbsp baking powder
  • salt pinch

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Mix the dry ingredients together in a bowl - cornmeal, flour, sugar, baking powder, and salt.
  3. Add in the melted butter and stir to combine. Slowly add the milk, while mixing to combine into a cohesive batter.
  4. Pour the vegan cornbread batter into a nonstick pan, with parchment paper lining the bottom.
  5. Bake for 20 minutes, or until golden brown.
