One Pan Creamy Tuscan Shrimp

This one-pan creamy Tuscan shrimp has pan-seared shrimp swimming in a buttery, rich cream sauce packed with sun-dried tomatoes, spinach, garlic, and parmesan cheese. Easy to make and guaranteed to impress!

Ingredients

  • 2 teaspoon olive oil drained from sun-dried tomatoes
  • 1 pound Shrimp peeled and deveined
  • ¼ teaspoon smoked paprika
  • 1 tablespoon butter
  • 1 small yellow onion diced
  • 4 cloves garlic minced
  • 5 oz sun-dried tomatoes soaked in olive oil
  • 1 teaspoon flour
  • ½ cup white wine
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon pepper adjust to taste
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • ½ cup Parmesan Cheese freshly grated from block
  • 1 ½ cup baby spinach
  • Handful of fresh basil leaves
  • Parsley for Garnish

Instructions

  1. Use olive oil from sun-dried tomatoes to sauté shrimp. Heat olive oil in a large skillet. Add peeled, deveined raw shrimp to the pan. Season shrimp with a generous pinch of salt and pepper and smoked paprika. Cook for 2-3 minutes on each side.
  2. Once the shrimp is nicely browned on both sides, transfer it to a plate, and set aside.
  3. To the same pan add butter. Saute diced yellow onion for about a minute. Add in minced garlic and continue to cook for 20-30 seconds.
  4. Add chopped sun-dried tomatoes, and stir cook for a minute.
  5. Stir in flour and mix well until combined. Continue to cook with frequent stirring until the flour is fragrant (cooked).
  6. Deglaze pan with dry white wine. Add the seasoning – salt, pepper, and Italian seasoning. Stir well and bring the sauce to simmer on medium heat. Keep stirring and cook until the sauce is thickened.
  7. Stir in heavy cream and freshly grated parmesan cheese. Cook until the sauce reaches desired consistency. Note – if the sauce turns thick, adjust the consistency by adding little water.
  8. Stir in spinach, a handful of fresh basil leaves, and sautéed shrimp. Mix well until combined.
  9. Toss cooked pasta with this creamy Tuscan shrimp to make a meal.
