Ingredients

  • 1 tablespoon olive oil
  • 1/4 /4 cup white onion, diced
  • 1/2 /2 teaspoon minced garlic 
  • 3/4 /4 cup uncooked long-grain rice
  • 1 1/2 /2 cups low-sodium chicken broth (I like to use Better than Boullion Chicken Base)
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • (optional) 2 (optional) 2 tablespoons sliced green onions

Instructions

  1. In a 10-inch skillet, heat the olive oil over medium heat. Add the onion and garlic. Sautee until onion is soft.
  2. Add the rice, chicken broth, and ham. Bring mixture to a boil, then lower to a simmer. Cover pan and simmer for 15 to 20 minutes or until liquid is absorbed and rice is tender.
  3. Stir in half of the cheddar cheese and then sprinkle the rest on top. Replace cover to pan to melt the cheese. Sprinkle with green onions. Serve!
