One Pan Pizza Chicken

Ingredients

  • 4 chicken breast boneless skinless
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 crushed tomatoes 28-ounce can
  • 1 teaspoon basil dried
  • ½ teaspoon oregano dried
  • ½ teaspoon parsley dried
  • ½ teaspoon red pepper flakes optional, crushed
  • 1 cup mozzarella cheese shredded
  • ¼ cup mini pepperoni
  • ¼ cup basil leaves

Instructions

  1. Preheat oven to broil.
  2. Season chicken with salt and pepper, to taste.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook, flipping once, until cooked through, about 4-5 minutes on each side; set aside.
  4. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1-2 minutes.
  5. Stir in crushed tomatoes, basil, oregano, parsley and red pepper flakes; season with salt and pepper, to taste.
  6. Bring to a boil; reduce heat to low and simmer, stirring occasionally, until sauce has thickened, about 15-20 minutes.
  7. Return chicken to the skillet. Top with mozzarella and mini pepperonis.
  8. Place into oven and cook until melted and golden brown, about 2 minutes.
  9. Serve immediately, garnished with basil, if desired.
