One Pan Tuscan Chicken in Parmesan Cream Sauce

Tuscan Chicken in Parmesan Cheese Sauce is a creamy, tender and delicious meal. Packed with spinach, two kinds of tomatoes, a splash of heavy cream turns this simple recipe into something fantastic! Bonus - you can make this chicken dinner recipe in one pan in about 30 minutes -- restaurant quality!

Ingredients

  • 4 chicken breasts boneless, skinless
  • 1 tablespoon extra virgin olive oil
  • kosher salt
  • black pepper
  • 1 teaspoon oregano
  • 3 tablespoons butter
  • 1 small shallot minced (optional)
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved (or grape tomatoes)
  • 3 cups baby spinach
  • ¼-1/2 cup sun-dried tomatoes dry or oil-packed
  • 1/2 cup heavy cream
  • ¼ cup parmesan fresh grated
  • Lemon wedges for serving (optional)
  • fresh basil for garnish

Instructions

  1. In a heavy bottomed skillet (cast iron is my favorite here) over medium heat, add oil and heat. Pat the chicken dry with paper towels, then sprinkle chicken on both sides with salt and pepper and oregano, then add to a hot pan, cooking until golden, about 4-5 minutes per side, depending on thickness of breasts. Remove from the skillet and tent with foil to keep warm.
  2. In the same skillet, melt the butter over medium heat. Add shallot and brown for a few minutes, add garlic and cook for one minute or until fragrant. Add cherry tomatoes and sun-dried tomatoes and season with a little salt and pepper.
  3. Cook, stirring occasionally until tomatoes are beginning to burst, then stir in baby spinach and stir until it begins to wilt.
  4. Stir in heavy cream and parmesan cheese and bring to a simmer. Reduce heat to low and simmer until sauce is thickened and slightly reduced. Return chicken to skillet, nestling in the sauce and cook until heated through, another 5 minutes or so should do it.
  5. We love serving this delicious dish over mashed potatoes, pasta and zoodles, with a little of the Tuscan cream sauce spooned over the top. A side of garlic bread and your favorite red wine tops off this meal!
  6. If desired, serve with a lemon wedge and a little fresh basil.

  • Tips for Two
  • This is an ideal recipe for two; you can either make the full recipe, which makes enough for 4 servings and that way you have lunch or dinner for another night using leftover Tuscan chicken or simple use the toggle under servings on the recipe card below and adjust it to two servings.
  • What to serve with Creamy Tuscan Chicken?
  • Variations
  • Add Red Pepper flakes or spicy mustard
  • I like to put it over fluffy mashed potatoes or pasta. You can use zoodles (zucchini noodles) for a low-carb option - the Tuscan sauce makes them taste so good!
  • Pair it with one of my favorite salads for added veggies and a hearty serving of homemade croutons.
  • Add a slice of cheesy garlic bread to the plate and perhaps a glass of wine!
  • Or serve with your favorite pasta.
  • Asparagus | washed, trimmed and chopped into bite size pieces
  • Broccolini or Broccoli | chopped small
  • Kale or Swiss Chard | Remove the heavy stems and cut into ribbons, tossing in when you would the spinach.
  • Mushrooms | Before you add the garlic to the butter, saute sliced mushrooms for 5-7 minutes until soften and golden.
  • Peas | Toss fresh or frozen peas in to the mixture
  • Artichoke Hearts | Either brined or marinated will work great here, cut whole hearts into quarters before tossing into the creamy Tuscan sauce.
  • Add in some heat | Add Red Pepper flakes or spicy mustard
  • Keto-friendly mashed | Serve this creamy Tuscan garlic chicken over cauliflower mash or roasted cauliflower instead of a starch.
