One Pot 15 Minute Potsticker Soup

Ingredients

  • 1 tbsp olive oil
  • 1 large onion diced
  • 3 carrots diced
  • 3 stalks celery diced
  • 2 stalks baby bok choy cleaned, chopped
  • 1 tbsp crushed garlic
  • ½ tbsp to 1 tbsp chili paste depending on preference
  • 1 stalk lemongrass
  • 16 oz chicken stock
  • 1 lb Potstickers frozen (I prefer pork)

Instructions

  1. In a large soup pot, heat oil on medium high heat until shimmery.
  2. Add onion, carrots, celery, and bok choy and cook on high until browned, about 7 minutes.
  3. Add garlic, chili paste, and lemongrass stir well and let cook for a minute or two until fragrant.
  4. Add stock and stir. Heat the mixture on stove on high so stock quickly comes to a boil.
  5. Add in potstickers and cook until soft and meat filling is cooked through, 8 minutes.
  6. Add the thai basil just before serving and let it wilt.
  7. Serve immediately.
