Ingredients
- 1 lb small pasta shells or elbow macaroni
- 1 red pepper sliced
- 1 yellow bell pepper sliced
- 1 cup corn frozen
- 1 red onion sliced
- 1 taco seasoning lower sodium, packet
- 20 ounces diced tomatoes with green chilies (2 cans - do NOT strain)
- 4 ½ cups water
- 1 TBS olive oil
- ½ teaspoon red pepper flakes
- 14 ounce black beans drained and rinsed, canned
- lime juice from 1
- 1 cup Colby jack cheese shredded
- 3 green onions chopped
