Ingredients

  • 1 lb small pasta shells or elbow macaroni
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 1 cup frozen corn
  • 1 red onion sliced
  • 1 packet taco seasoning lower sodium
  • 20 ounces diced tomatoes with green chilies (2 cans - do NOT strain)
  • 4 ½ cups water
  • 1 TBS olive oil
  • ½ teaspoon red pepper flakes
  • 14 ounce can black beans drained and rinsed
  • juice from 1 lime
  • 1 cup shredded Colby jack cheese
  • 3 green onions chopped
