One Pot Chicken Alfredo

Ingredients

  • 16 ounces pasta dry
  • 1 tablespoon butter
  • 1 teaspoon garlic or shallots, chopped
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan Cheese
  • 2 cups chicken cooked
  • salt to taste
  • chives chopped if desired
  • mozzarella cheese optional

Instructions

  1. In a large pot, cook the pasta according to the package directions. Drain pasta.
  2. In the same large pot, saute minced garlic in 1 tablespoon of butter. Saute over medium heat until the garlic is tender.
  3. Stir in heavy cream, Parmesan cheese, drained pasta, and chicken. Blend until the cheese has melted. Season to taste with salt and pepper if desired.
  4. Sprinkle with chives and add mozzarella cheese if desired. You can pop the pot into your oven set on broil if you want to brown the added mozzarella cheese for an added effect.

Notes

  • The secret to restaurant-quality alfredo at home is using freshly grated parmesan cheese. Pre-shredded varieties contain anti-caking agents that prevent proper melting and can make your sauce grainy. Take the extra minute to grate it yourself—the difference is remarkable. For an extra flavor boost, reserve a tablespoon of pasta cooking water before draining and add it to your finished dish—those starches are liquid gold for sauce consistency.
