One-Pot Chicken Sausage & Bean Ragout Recipe

Ingredients

  • 1 teaspoon olive oil
  • 8 chicken sausages such as 5th Avenue Grill, cut into half-circles
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 1 14 ounce can of low-sodium black beans, drained & rinsed
  • 1 28 ounce can petite diced tomatoes
  • 1 cup low-sodium chicken broth
  • ½ teaspoon ground pepper
  • 5 basil leaves thinly sliced

Instructions

  1. Heat the olive oil in a large skillet set over medium-high heat.
  2. Add the sausages and onion, and cook until the onions are tender, about 8 minutes. Add the garlic and cook for 30 seconds.
  3. Stir in the black beans, diced tomatoes, chicken broth and pepper. Bring to a boil, then reduce heat and cook at a lively simmer for 15 minutes.
  4. Stir in the basil. Serve over brown rice, quinoa or whole wheat pasta.
