One Pot Chicken

Ingredients
- 4 chicken breasts
- 2 tbsp olive oil
- ½ pound small gold potatoes
- 1 sprig fresh Rosemary
- ½ pound green beans
- salt and pepper
Sauce
- ¼ tbsp whole grain mustard
- 2 tbsp Dijon mustard
- ⅓ cup honey
- 1 tbsp apple cider vinegar
- ½ tsp smoked paprika
- 1 tbsp olive oil
Instructions
- Heat 2 tablespoons of olive oil in a pot.
- Season the chicken breasts with salt and pepper.
- When the olive oil is hot, brown the chicken breasts on both sides.
- Once the chicken is golden brown on both sides, remove the chicken breasts.
- In the same pot, add the potatoes and rosemary.
- Bake in the oven at 180℃/375℉ for 15-20 minutes.
- While the potatoes are cooking, prepare the sauce.
- In a bowl, combine oil, paprika, honey, vinegar, classic mustard, and Dijon mustard.
- Mix the sauce well with a whisk and set aside.
- Remove the potatoes from the oven and add the green beans and chicken breasts to the same pot.
- Add all the sauce to the pot and mix well.
- Bake in the oven at 180℃/375℉ for 20 minutes with the lid on.
- Finish cooking for another 10 minutes without the lid.
- Serve directly from the pot to the table or on a large plate.
