Ingredients

  • 2 teaspoon canola oil
  • 6 ounces andouille sausage
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 green bell pepper, seeds removed and chopped
  • 2 garlic cloves, minced
  • 1 cup uncooked wild rice
  • 1 cup water
  • ¼ teaspoon red pepper flakes
  • 6 sprigs fresh thyme
  • 14 ounce can lower sodium chicken broth
  • 14 ounce can fire roasted tomatoes
  • 1 cup shredded chicken (rotisserie chicken works great!)
