  • 1 eggplant about 400 gms - 1 lb, medium
  • ½ onion chopped
  • 3 vine tomatoes seeded and chopped
  • 3 garlic minced, cloves
  • 60 ml olive oil extra virgin, 1/4 cup
  • 2 tsp salt
  • 1 tsp oregano dried
  • 1 cup long grain rice
  • 600 ml chicken stock or vegetable stock; 2 ½ cups
  • 1 tbsp basil chopped for garnish
