One Pot Mediterranean Sausage and Lentils

In one pot, cook up a healthy and delicious dinner filled with mediterranean flavors and packed with protein from sausage and lentils.

Ingredients

  • 2 tablespoons olive oil
  • ½ cup onion diced
  • 4 garlic minced, cloves
  • 1 cup baby bella mushroom sliced
  • 1 pound Italian sausage
  • 1 cup lentils
  • 14.5 ounces diced tomatoes
  • 3 cups vegetable broth
  • 1 teaspoon kosher salt
  • 1 teaspoon oregano dried
  • 1 teaspoon parsley dried
  • ½ cup red bell pepper chopped, roasted
  • ¼ cup basil finely chopped
  • ¼ cup Parmesan Cheese grated

Instructions

  1. Heat the olive oil in a large pot on the stove over medium heat.
  2. When the oil is hot, add the onion, garlic and mushrooms, saute for 3-4 minutes, then add the sausage and cook through.
  3. Drain any grease from the pot, then add the lentils.
  4. Add the tomatoes, vegetable broth, kosher salt, dried oregano and parsley.
  5. Bring to a boil, then reduce the heat to low and simmer covered for 90 minutes.
  6. Mix in the roasted red pepper.
  7. Remove from the heat and top with fresh basil and parmesan cheese.
