One Pot Thai Chicken

One Pot Thai Chicken is made in a single skillet & is bursting with rich flavors! This chicken is incredibly tender & moist, and super easy to make!

Ingredients

  • 2 tablespoons butter
  • 8 bone-in, skin-on chicken thighs
Sauce
  • ½ cup Thai sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons creamy peanut butter
  • 2 teaspoons minced garlic 
  • 2 tablespoons oyster sauce
  • ½ tablespoon ginger paste
  • 1 tablespoon lime juice
  • 2 teaspoons Sriracha or other hot sauce
Garnish
  • ¼ cup peanuts chopped
  • fresh cilantro chopped

Instructions

  1. Preheat oven to 400 degrees F.
  2. Whisk together sauce ingredients in a small bowl, and set aside.
  3. In a large oven-proof skillet, over medium heat, melt butter, and place once melted, place chicken, skin-side down into pan.
  4. Sear both sides until the skin is nice and golden brown, and crispy. This takes about 3 minutes per side.
  5. Remove from heat, and turn chicken skin side up (should already be), and cover with sauce.
  6. Place into oven and roast for 25-30 minutes until chicken is cooked through (165 degree internal temp).
  7. Turn oven on to broil, and broil 2-3 minutes to crisp everything up and further caramelize the sauce.
  8. Garnish with peanuts and cilantro, and serve.
