Onion Jam

Ingredients

  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 4 onion chopped, yellow
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper coarse ground
  • 1/2 cup red wine vinegar

Instructions

  1. To a large heavy skillet on medium heat add the olive oil and sugar.
  2. Stir well and cook for 5-7 minutes until sugar begins caramelizing.
  3. Add in the onions, salt and pepper.
  4. Stir well and cook (stirring constantly) for 18-20 minutes until onions are browned.
  5. Add in the red wine vinegar, reduce heat to low and cook for 25-30 minutes until the onions are a jam consistency.
  6. Let cool before serving.
