Ingredients

  • 1 large sweet onion sliced into 1/4-inch rings
  • 1 quart vegetable oil for frying
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup panko breadcrumbs

  1. Slice the onion into 1/4-inch-thick rings and separate them carefully.
  2. Heat the oil in a deep-fryer or large saucepan to 365°F.
  3. In a shallow dish, whisk together the flour, baking powder, and salt. In another dish, whisk the buttermilk and egg. Place the breadcrumbs in a third dish.
  4. Dredge each onion ring in the flour mixture, dip into the buttermilk mixture, then coat with breadcrumbs. Place on a wire rack.
  5. Fry the onion rings in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
