Ingredients

  • 1 package gelatin powder 3 ounces, orange flavor
  • 1 cup water boiling
  • 1 cup orange juice
  • 8 ounces cottage cheese 1 cup
  • 8 ounces Cool Whip thawed
  • 8 ounces mandarin orange 1 cup

Instructions

  1. Dissolve the orange Jello in boiling water. Stir for about 2 minutes to completely dissolve it.
  2. Add orange juice and mix.
  3. Refrigerate the gelatin mixture until it just starts to thicken and gel. This usually takes 30-45 minutes. You want it to still be liquid but start to thicken.
  4. Drain the mandarin oranges. Then stir in the cottage cheese, Cool Whip, and mandarin oranges.
  5. Refrigerate for about 2 hours or until firm.

Notes

  • Swap gelatin flavors and corresponding fruits to customize the salad's taste.
  • For additional sweetness, mix in mini marshmallows or shredded coconut.
  • Add nuts like pecans, walnuts, or almonds for a crunchy texture contrast.
