Ingredients

  • 1 lb large shrimp
  • 1 lb fresh asparagus cut into 1 inch pieces
  • 1-2 Tablespoon coconut oil or olive oil
  • 3 garlic cloves minced
  • 1 teaspoon ginger powder or ginger paste
  • Juice of 2 fresh oranges
  • 2 Tablespoon soy sauce or coconut aminos

Instructions

    Cup of Yum
  1. Preheat a large skillet and add the oil and garlic.
  2. Sauté for approx. one minute.
  3. Add the asparagus and cook until bright green, approx 3 minutes.
  4. Add the shrimp, ginger, soy sauce or coconut amigos, and fresh orange juice.
  5. Stir continually until the shrimp are cooked thoroughly.
  6. Serve over rice
