  • 3 tbsp extra virgin olive oil
  • ½ onion chopped
  • 60 ml white wine ¼ cup
  • 1 fennel wilted, bunch, tops
  • 1 pinch saffron
  • 30 ml water 1/8 cup
  • salt to taste
  • parmigiano reggiano finely grated to serve
  • 400 gms orecchiette pasta
