Ingredients

  • 400 g chicken breast Fillets, cut into bite-sized pieces
  • 100 g plain flour
  • 2 eggs beaten
  • 150 g breadcrumbs
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt to taste
  • black pepper to taste
  • cooking spray for greasing

Instructions

  1. Preheat the oven to 200°C (180°C fan-assisted) and lightly grease a baking tray with cooking spray or olive oil.
  2. In a shallow dish, combine the plain flour with paprika, garlic powder, onion powder, salt, and black pepper.
  3. In another shallow dish, place the beaten eggs.
  4. In a third shallow dish, spread out the breadcrumbs.
  5. Coat each piece of chicken in the seasoned flour mixture, then dip into the beaten eggs, and finally coat evenly with breadcrumbs, pressing gently to adhere.
  6. Place the coated chicken nuggets on the prepared baking tray, leaving a little space between each piece.
  7. Lightly spray the tops of the chicken nuggets with cooking spray or drizzle with a little olive oil.
  8. Bake in the preheated oven for 12-15 minutes, or until the nuggets are golden brown and cooked through, flipping halfway through cooking.
  9. Once cooked, remove from the oven and serve immediately with your favorite dipping sauce.

Notes

  • For extra crispy nuggets, you can double coat the chicken by repeating the egg and breadcrumb process.
  • Feel free to customize the seasoning according to your preference. Adding herbs like thyme or rosemary can add extra flavor.
