Oven Baked Fingerling Potatoes

These roasted fingerling potatoes are the ultimate side dish. Perfectly seasoned & roasted on the outside, tender & fluffy on the inside!

Ingredients

  • 1 pound fingerling potatoes cut in half lengthwise
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ¼ teaspoon dried thyme leaves or 2 sprigs fresh thyme
  • 1 teaspoon black pepper
  • 1 tablespoon shredded Parmesan cheese

Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, combine potatoes, oil, garlic, salt, pepper, and thyme. Toss until evenly coated.
  3. Spread onto a baking sheet flat side down and bake for 15 minutes.
  4. Remove from the oven and sprinkle parmesan cheese on top, return to the oven and cook for another 10-15 minutes or until potatoes are golden brown in color.

Notes

  • In the Air Fryer: Preheat the air fryer to 400°F. Cut the potatoes, coat with spices and oil. Place in the air fryer. Cook for 7 minutes. Sprinkle with parmesan and cook for another 8 minutes.
