Oven-Baked "Fried" Pickles

- ¼ cup flour
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp oregano
- ½ tsp thyme
- Sea Salt and Freshly Cracked Pepper to taste
- 1 egg well beaten
- ½ cup plain panko crumbs
- 12 pickle slices

Instructions
- Preheat your oven to broil with the rack in the center of the oven. Line a baking sheet with foil, then coat with cooking spray.
- Make the chipotle ranch, if desired. Click here for the recipe.
- Combine the flour with paprika, onion powder, garlic powder, oregano, thyme, sea salt, and freshly cracked pepper; mix well. Side Note: Be careful not to add too much salt because the pickles will already be salty.
- Dip the pickle slices into the flour mixture; then dip into the beaten egg, and finally coat evenly with the panko crumbs.
- Place onto the prepared baking sheet. Repeat with the remaining pickle slices.
- Place into the oven and broil for 3-4 minutes under the broiler, making sure to watch carefully so they don't burn.
- Flip the pickles over and cook under the broiler for another 3-4 minutes, or until golden brown.
- Remove from the oven and serve with the chipotle ranch, if desired. Enjoy.
