Oven Roasted Snapper Parcels
These Oven Baked Snapper Fillets are delicious, simple, and never disappoint! Serve them with some buttered potatoes and a salad for an easy dinner idea! Making parcels with foil means the fish stays juicy and tender. Then the capers, lemon, and parsley give it plenty of flavor. Cook this in under 20 minutes with almost zero clean up! Ingredients
- 1 teaspoon Lemon infused olive oil or regular olive oil
- 4 snapper fillets
- 4 tablespoon parsley
- 1 lemon
- 2 tablespoon capers
- salt and pepper
Instructions
- Pre-heat the oven to 170°C/340F/Gas Mark 5.
- Cut 4 pieces of tin foil big enough to hold a fillet and lightly brush them with lemon oil (or olive oil).
- Place a snapper fillet in the middle of each piece of tin foil.
- Chop the parsley and divide it between the fillets.
- Zest the lemon and sprinkle this over the fish. Squeeze a little lemon juice over each fillet.
- Sprinkle over the capers and season with pepper and a small amount of salt.
- Fold and scrunch the foil up to make a secure parcel around each fillet and slide the parcels onto a baking sheet.
- Bake the parcels for 12-14 minutes until just cooked.
