Oven Roasted Tomatoes Recipe
Oven Roasted Tomatoes are made by halving Roma tomatoes, drizzling them with olive oil, seasoning with salt and pepper, and roasting at a high temperature until blistered and cooked through. This intensifies the tomato's natural flavors and softens their texture, creating slices that are rich and slightly caramelized. They can be served warm, cold, or stored for later use.
Ingredients
- 1 pound Roma tomato
- 3 tablespoons olive oil
- salt coarse salt and cracked pepper to taste
- black pepper coarse salt and cracked pepper to taste
Instructions
- Preheat the oven to 450°.
- Slice the tomatoes in half longways or widthwise.
- Place the tomatoes seed side up on a rack over a sheet tray lined with parchment paper.
- Evenly drizzle the olive oil over each tomato slice.
- Season the tomatoes well with salt and pepper.
- Roast in the oven at 450° on a rack in the middle of the oven for 35 minutes or until blistered and cooked.
- Serve or store the oven-roasted tomatoes.
Notes
- Roasted tomatoes can be kept warm in the oven at 165° to 200° F up to 1 hour before serving.
- Store them covered in the refrigerator for up to 5 days or freeze for up to 3 months.
- To reheat, spread tomatoes on a rack and bake at 350° F for 6 to 8 minutes until warm.
- You may serve the tomatoes cold, especially when used in salads or sandwiches.
