  • 1½ cups chopped red peppers
  • 1½ cups baby carrots
  • 1½ cups Brussels sprouts
  • 1½ cups cubed Yukon Gold potatoes

  • 3 tablespoons olive oil
  • 1 tablespoon garlic salt with parsley flakes
  • 1 tablespoon Italian seasoning
  • ¼ cup grated Parmesan cheese

Instructions

    Cup of Yum
  1. Preheat the oven to 425 degrees F. Line a baking sheet with aluminium foil and spray with onstick cooking spray. Set aside.
  2. Place all veggies in a bowl and add olive oil, garlic salt and Italian seasoning. Toss to coat.
  3. Place veggies on a prepared baking sheet and sprinkle with Parmesan cheese. Bake for 25-30 minutes, flipping over halfway through.

Notes

  • Want to Add Other Veggies? Try these vegetables that also take 25–30 minutes to cook: acorn squash, pumpkin, yams or onions. Not all veggies take this long to cook, so if you want to add other vegetables like broccoli, zucchini, squash and asparagus, be sure to take them out earlier so they don’t burn.
