Oysters with Spicy Maple Dressing
This is a light and delicious dressing that compliemts the fresh briney Coffin Bay Sydney Rock oysters. Maple syrup is a very light sweetener that just takes the edge off lemon juice without overpowering

Ingredients
- 12 oysters
- 20 ml maple syrup 1 tablespoon
- 5 ml fish sauce 1 teaspoon
- 40 ml lemon juice 2 tablespoons
- 1 teaspoon eshallot very very finely diced can be substituted with chives or spanish onion
- 1/2 chilli minus seeds and chopped very very fine
- 2 prigs Coriander for serving
Instructions
- Mix all of the ingredients together
- Serve 1/2 a teaspoon spooned over the oysters or in a container on the side
- Serve with sour dough or rye bread
