Ingredients

  • 2 egg
  • 1 avocado peeled and diced, California
  • 3/4 cup almond milk unsweetened
  • 2 cups almond flour Super Fine
  • 1/4 cup tapioca flour
  • 1 tsp baking powder
  • 1/4 tsp salt sea salt

Instructions

    Cup of Yum
  1. Add all ingredients to a high-powered blender. Blend until completely smooth. Batter will be very thick - this is normal!
  2. Heat a non-stick skillet or griddle over medium-low heat and add enough cooking oil to coat the surface (I like using coconut oil).
  3. Once the pan is completely hot, measure ¼ cup of pancake batter and pour onto the hot surface. Use your finger to carefully spread the batter into a circular shape.
  4. Cook 2 minutes or until the sides of the pancake begin to firm up. Carefully flip and cook another 2 minutes, or until pancake is cooked through. Repeat for remaining batter.
  5. Serve pancakes with choice of toppings.
