Ingredients

  • 1 large banana mashed, ripe
  • 1 large egg lightly beaten
  • 2 tablespoons coconut milk or almond milk (see note, full-fat
  • 1 tsp maple syrup or honey
  • 2 Tbsp coconut flour or almond flour, 4 tablespoons
  • 1 tablespoon pecans or walnuts, chopped, raw
  • 1/4 teaspoon ground cinnamon optional
  • 1/4 teaspoon baking powder
  • Pinch salt sea salt

Instructions

  1. Mash the banana in a microwave-safe mug until it's nice and creamy.
  2. Add the rest of the ingredients to the mug and mash/stir together until well-combined.
  3. Microwave on high for 2 to 3 minutes, or until cake has set up and tests clean.
  4. Allow cake to cool slightly before diving in!

Notes

  • If substituting almond flour for coconut flour, omit the coconut milk unless the batter appears too dry.
  • You may omit the sweetener completely or adjust the amount to suit your preference.
